We source our tomatoes from California's Central Valley, our mozzarella from local creameries, and our herbs from our own garden out back. The dough ferments for 48 hours. The oven hits 900 degrees. The result is a crust that's crisp on the outside, chewy on the inside, and impossible to ignore.
